– 2 cups fresh spinach (palak) – 200g paneer (cottage cheese) – 1 large onion, finely chopped – 2 tomatoes, pureed – 2 green chilies, finely chopped – 1-inch ginger, grated – 3 cloves of garlic, minced – 2 tbsp oil – Salt to taste – 1 tsp cumin – 1 tsp coriander powder – 1/2 tsp turmeric – 2 tbsp cream

Prepare Ingredients: Wash and blanch spinach for 2 minutes. Plunge into ice water, then blend into a smooth paste. Dice paneer into cubes.
Sauté Aromatics: Heat oil in a pan, add finely chopped onions. Sauté until golden brown. Add grated ginger, minced garlic, and chopped green chilies. Sauté until fragrant.
Tomato Base: Add pureed tomatoes to the pan. Cook until the mixture thickens, and the oil separates. Season with salt, cumin, coriander powder, and turmeric.
Spinach Puree:Integrate the spinach puree into the tomato base. Simmer for 5 minutes, adjusting the consistency with water if needed.
Paneer Addition : Add the diced paneer cubes to the simmering spinach mixture. Allow them to cook for about 5 minutes, ensuring they absorb the flavors.
Finish with Cream: Pour in the cream, stirring well. Simmer for an additional 2 minutes to meld the flavors and create a creamy consistency.
Serve: Garnish with a dollop of cream and serve hot with naan or rice. Palak Paneer is ready to be enjoyed, offering a delightful blend of nutritious spinach and succulent paneer in a rich, flavorful curry.
