Wash the strawberries thoroughly and remove the stems. Cut them into small pieces. Place the strawberries in a blender or food processor and blend until smooth.
Add the granulated sugar to the strawberry puree and blend again until the sugar is fully dissolved. Taste the mixture and adjust the sugar if needed.
If desired, add a squeeze of fresh lemon juice to enhance the strawberry flavor. Blend briefly to incorporate. In a separate bowl, whisk together the plain yogurt or coconut milk until smooth.
Pour the strawberry puree into the yogurt/coconut milk mixture and stir well to combine. Make sure the mixture is smooth and evenly mixed.
Carefully pour the mixture into ice popsicles molds, leaving a space at the top for expansion. Insert the popsicles sticks into each mold, making sure they are fully immersed in the mixture.
Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid. .
Once the strawberry ice popsicles are frozen, remove them from the molds by running warm water over the molds for a few seconds. Gently pull the popsicles out.
